Chinese Alcohol

Red Star Erguotou - Chinese firewater. Harsh, smells a little like gasoline.

Tiger Beer, Asia Pacific Brewing Co. This version is imported from Singapore. Domestic macrobeer quality at imported microbrew prices. Not worth it.

Mama Jok Cup

Nasty rice porridge - like a thin rice gruel. Flecks of parsley, bits of leek, stringy bits of flavorless ginger, chicken flavor. "Non- dairy cream" made with palm kernel oil & other filth. Really awful stuff with a really funny name.

4 whole boneless pork loins - $75.00

Black pepper - $8.00
Wood splints - $4.00
Plastic cable ties - $20.00
Casings - $18.00
Hot seasoning - $5.00

Total - $132.00

Expected yield: 24 pounds of capicola (about $5.50 a pound)

Work on another couple of articles about seasoning. Something along the lines of "secret ingredients" that might not be able to be picked out individually, but that would affect the taste of a dish if they were skipped.
