stop and shop necc

good waxy potatoes, ok clams. moderately flavorful, but a bit bland. Lots of starch, v little cream, no butter. Oil and starch tends to separate in the broth. Kinda gross.

New England Country Soup

Still #1. The only chowder that has a really strong clam taste - like biting into a fresh steamer. no change from earlier review.

olde cape cod ready to eat

lots of clams, good deep flavor helped by shrimp powder. Decent amount of potatoes (a little grainier than some other brands.) ok on the clams. Good consistency, not too thick, not runny. Not salty, but not bland either. Could use a little black pepper. A solid 8/10

Campbell's chunky

improved recipe with more clams
clammy taste but still with that overall Campbell's soy flavor - soy protein & soy sauce
Lots of clams, yes, but mostly tiny little shreds
decent consistency but no cream or milk in it, all starch & oils and water
almost an 8/10 though for flavor, call it a 7+

bumblebee/snow's chowder

Previous review:
Snow's (ready to serve) - The difference between this and Snow's condensed is like night and day.  Delicious broth, just the right consistency, luscious with cream and butter. Plenty of clams (mostly small pieces, but there are some fairly good chunks in there too) and lots of chunky potatoes. This is good enough to buy again! Final score:8/10

Now:

Different label, now fully suborned to the Bumble Bee brand. Less clam flavor. Clams only in tiny bits. Thicker, gluey consistency, lots of soybean oil, no clam broth (water.) Much of the flavor now seems to come from the "concentrated soy protein" rather than clams. This is so much worse than it was just three years ago that it's hard to believe.

campbell's slow kettle chowder

very thick & starchy. Kind of clam flavored but has that same back taste of "something else" just like campbell's chicken soup.
Big chunks of potatoes, bits of celery, v tiny clam pieces. Decent seasoning.
Explodes like a cannon when microwaved, keep covered when heating.
Like the "with thyme"on the label. I make homemade with thyme, nice touch.

Strange ingredients: beef extract, smoke flavoring
"applewood bacon" which they say has pork, salt, and smoke flavoring.
then also pork & smoke flavor.

1st 5: clam stock, potatoes, clams, cream, vegetable oil (?)
Can't figure out why this isn't better.

captain parkers chowder

Absolutely astonishing in its quality. Very rich and flavorful, lots of clams and chunks of potatoes. The first chowder I've had where I've gotten clams in every single spoonful.
A little starchy but not bad.
1st 5 ingredients: light cream, water, clam meat, potatoes, butter.
onions and flour
anchovy, cooked shrimp, pollack, and crab, even salt pork like home made.

nisin preparation?

fats

Lard

  • Large fat crystals make flakier pastry (cite earlier pie crust recipe, give a biscuit recipe)
  • Doesn't smoke at high temp
  • 20% less saturated fat than butter
  • Don't use hydrogenated lard (give list of brands)
  • hydrogenation/trans fats
  • 1.75 cups makes crusts for 2 pies. Cut each pie into 8 slices, and there is 5.25 tsp lard in each slice. Cut the pie into 6 slices, and there is 7.2 tsp of lard in each slice.

Shortening

  • hydrogenated
  • vegetable, "creamed" (animal tallow)
